Oven-Roasted Vegetables

These veggies are absolutely great!  I fix this side dish at least once every two weeks and I never hear any complaints from the family!  This dish can be made year round by using frozen veggies and adding any fresh ones that you have on hand.

Here is what I use to make it:

Olive oil, frozen California Style Vegetables(1 pound package), salt, Mrs. Dash seasoning(or your favorite salt-free herb blend) and fresh asparagus.

To begin, pre-heat your oven to 400 degrees

Cut the asparagus into 1 to 2 inch pieces.

Place the asparagus and the frozen vegetables on a large cookie sheet or in a roasting pan that has been sprayed with non-stick spray.

Sprinkle the vegetables with 1/2 teaspoon of salt.

Next sprinkle with 1 teaspoon of Mrs. Dash or your favorite No-salt seasoning.

Now drizzle 2 to 3 tablespoons of olive oil over the vegetables.

Use your hands or a pair of tongs to toss the vegetables to make sure the oil and seasonings are well distributed over all of the vegetables.  Now you are ready to cover the pan with aluminum foil.

Place in oven and bake for 25 minutes or until steaming hot and tender.

  1. That is awesome! I was sisoeurly thinking of doing a post dedicated to asparagus last night. Great post! It’s so good this time of year, you can also eat it raw with a yummy dip. Delicious!
